There are two reasons I like to bake clafoutis-

  1. It makes me feel fancy, even if I haven’t brushed my hair and have unidentifiable baby-stains on my t-shirt.
  2. It sounds impressive and exotic, but you can throw it together in a cinch. (rejoice!)

Pear Ginger Clafouti

What is clafoutis exactly? Well, its a french dessert traditionally made by lining a buttered dish with fruit, and pouring a batter over the top before baking. The result is a heavenly,  dense flan-like dish. In this version I have tried to keep things a little healthier for you. I use 100 % whole wheat flour, and it is far lower in refined sugar than your typical clafoutis. The pears are sweetened with just a couple of tablespoons of sugar, and the batter is sweetened with maple syrup (or honey, if you prefer).

Ingredients
  • 2 large ripe pears, peeled, cored and thinly sliced
  • 2 tbsp brown sugar
  • 1 tsp freshly grated ginger (from a small 1 inch chunk)
  • ¾ cup whole wheat pastry flour (regular whole wheat flour will work, but your final dish will be more dense)
  • pinch salt
  • 4 tbsp butter, melted and cooled
  • ⅓ cup maple syrup (or honey)
  • 3 large eggs
  • ½ tsp vanilla
  • ⅓ cup whole milk
Method
  1. Preheat oven to 350F/180C
  2. Grease a 9 inch pie dish liberally
  3. Arrange the thinly sliced pears in the bottom of the dish in a single layer, and sprinkle the brown sugar and ginger over the top as evenly as possible. Set aside
  4. In a medium sized bowl, whisk together the flour and salt.
  5. In a large measuring jug, whisk together the cooled butter, maple syrup, eggs and vanilla. Pour the wet ingredients into the flour mixture, and whisk to combine. Add the milk, and whisk until smooth.
  6. Pour the batter over the pears, and place the dish in the oven. Bake of about 35 minutes until the batter is set and golden. It may puff up a little, but it will settle down after a few minutes of being out of the oven.
  7. Eat hot with ice cream, cream, extra maple syrup, or even cold. The leftovers heat well in a microwave.

Notes

Make it healthier- feel free to omit the brown sugar if you want to make this completely refined sugar free.

Make it seasonal- pear and ginger if perfect for autumn, but this recipe is very adaptable. Try it with apples and cinnamon, blueberry and lemon zest in the summer, or keep it traditional with cherries! If you experiment, let me know what you find.

Make it breakfast- I think clafoutis makes for a stellar “treat” breakfast. You can make it ahead, and it keeps well in the fridge for at least 4 days.

This vegetarian butternut squash goat cheese lasagne makes for perfect winter comfort food.

Ingredients
  • Squash Filling
  • 2 tbsp of butter
  • 1 tbsp of olive oil
  • 10 sage leaves
  • 2 medium onions, diced
  • 3 garlic cloves, minced
  • 1 large butternut squash, peeled and cut into small bite sized chunks
  • ¼ cup of white wine
  • ¼ cup of water or vegetable stock
  • 14.5oz (400g) tin of tomatoes
  • salt & pepper to taste
  • Tomato Sauce
  • 2½ cups (750ml) of passata or tomato sauce
  • 2 cups of water
  • Cheese Sauce
  • 1½ cups of goat cheese
  • 2 cups of whole milk ricotta
  • 3 eggs
  • ½ tsp nutmeg
  • For Assembly/ To Garnish
  • 1 package of fresh lasagne or oven ready (see notes)
  • 1 ball of fresh mozzarella
  • ¼ cup chopped walnuts
  • 12 sage leaves
Method
  1. Melt butter and oil in a large lidded skillet
  2. Add sage leaves and fry for about 2 minutes until the oil is infused with delicious sage flavor.
  3. Add onions and fry for for about 5 minutes until softened
  4. Add garlic and fry for a minute more
  5. Add cubed butternut squash, and give everything a good stir, add wine, tomatoes and stock or water to the pan, season everything generously with salt and pepper
  6. Cover and simmer for about 20-25 minutes until the squash is meltingly soft but still retaining its shape
  7. While this is happening, prepare the tomato and cheese sauces.
  8. For the tomato sauce, simply combine the passata and water in a large jug, set aside
  9. For the cheese sauce, begin by lightly whisking the eggs in a large bowl
  10. Add the ricotta and combine thoroughly
  11. Next, add the goat cheese and stir until combined (note: this will be easier if you have cut your cheese up into small chunks first!) season with nutmeg and a generous grind of black pepper, set aside
  12. When the squash is cooked, we are ready for assembly! At this point, preheat your oven to 400F/200C
  13. Begin by tipping about half of the tomato sauce into the bottom of a 10x14 lasagne pan
  14. Next, line the pan with a layer of lasagne sheets
  15. Add about half of the squash mixture in an even layer
  16. Top this with half of the cheese mixture
  17. Then add a second layer of lasagne sheets
  18. The remainder of the squash mixture
  19. Followed by the remaining half of the cheese mixture
  20. Pour the remaining tomato sauce evenly over the whole dish
  21. Finally top everything with the sliced mozzarella and remaining sage
  22. Scatter the walnuts evenly over the top
  23. Bake for about an hour and allow to rest for about 10 minutes before you serve

I have been doing pretty well on the hearty soups this winter, but decidedly less well on the salads. I love a good winter salad, and I think its a perfect time to experiment with nourishing bean and lentil salads, grain-based salads or even warm potato salads. I find the trick is to stick to fruits and vegetables that are in season, otherwise you will be left with something pretty blah.

This salad is far from blah. Last week I had a REALLY strong craving for something raw, fresh, crunchy and light, so I whipped this up from ingredients languishing in my fridge. The result was winter salad NIRVANA, so I wanted to share it with you fine people as soon as possible.

The kale ribbons provide a robust and bolstering base with just a little crunch along with the almonds, and the feta compliments this perfectly with its creaminess. The orange provides a little extra texture, sweetness and zing, and finally the honey lime dressing ties everything together, and gives everything a lift. Don’t you love it when a seemingly random hodgepodge of ingredients combine to make something wonderful?!

Serves: 2 large salads, 4-6 as a side
Ingredients
  • For the dressing:
  • Juice of one lime
  • 2 tbsp olive oil
  • 1 tbsp honey
  • ¼ tsp chili flakes
  • sea salt and pepper to taste
  • For the salad:
  • 1 bunch lacinato kale (dinosaur/tuscan kale)
  • 2 naval oranges
  • ⅓ cup flaked almonds
  • ½ cup feta, crumbled
Method
  1. Whisk the dressing ingredients and set aside.
  2. De-stem the kale, and cut the leaves into small ribbons (the smaller the ribbons, the more tender they will become). Transfer the kale into a large bowl, sprinkle with sea salt and pour the dressing over the top. Using your fingers, massage the kale for a few minutes until the leaves start to become tender, then set aside. The leaves will continue to become tender as they marinate in the dressing, so you can leave the leaves for up to a few hours if you desire
  3. Cut each orange into quarters segments, and then run the knife along the peel of the orange and remove any excess rind. Cut each orange quarter in half and add to the bowl
  4. Toast the almonds gently in a hot dry pan until they are golden and fragrant, add them to the bowl with the kale and orange
  5. Finally crumble feta into the bowl, and give everything a good toss to combine
