I love the challenge of creating a meal from an understocked kitchen, don’t you?! This salad was the result of some cupboard staples, a handful of herbs languishing in the back of my fridge and a scrap of leftover feta. The shining star was a beautiful crisp cucumber, lovingly grown and bestowed on me by my friend Stephanie. All tossed together, these otherwise unpromising ingredients became a beautiful, hearty summer salad.

I was going for a tabbouleh vibe here, and the final result is a satisfying contrast of nutty bulgar and lentils with the crisp, fresh cucumber, herbs and lemons. I probably overuse feta in my cooking, but it really is the perfect finishing touch for this salad, so I highly recommend not skipping it!

Bulgar Lentil Cucumber Salad- Emma's Little Kitchen

Bulgar, Lentil and Cucumber Salad

This Bulgar, Lentil and Cucumber Salad is hearty and filling, with a fresh light summer flavour.

Ingredients
  • Salad:
  • ½ cup bulgar wheat*
  • ½ cup dried green lentils
  • 3 tbsp finely chopped parsley
  • 2 tbsp finely chopped mint
  • 1 large cucumber, cut into bite sized chunks**
  • ¼ cup pumpkin seeds
  • ¼ cup very finely chopped red onion
  • ⅓ cup feta, crumbled
  • Dressing:
  • 2 tbsp olive oil
  • juice of 1 lemon
  • pinch of chili flakes
Method
  1. Put the bulgar wheat and lentils in a medium saucepan, cover with about 2 cups of water and bring to the boil, reduce to simmer for about 12-15 minutes until bulgar and lentils are tender. Transfer to a colander or sieve to drain off any excess liquid and cool down while you prepare the rest of the salad. I usually chop my vegetables while the lentil-bulgar mix is drying and cooling
  2. Toast pumpkin seeds in a hot dry pan until nutty and fragrant (barely 2 minutes), set aside.
  3. Whisk together dressing ingredients and set aside.
  4. Assemble the salad: In a large bowl, mix together the bulgar, lentils, herbs, cucumber, pumpkin seeds and onion. Pour the dressing ingredients over the top and give everything another quick mix. Sprinkle the feta over the top and serve!

Notes:

This salad tastes amazing if you are able to let it sit for a while because the flavours really develop. If you have the time, I recommend making it a day ahead or at least make a double batch so you can enjoy the next day too!

*If you can’t have/can’t find/don’t have bulgar, replace with quinoa or another grain.

**I usually keep the skins on my cucumber, but if you have a very bitter-skinned cucumber, then I would peel it

Self care. Do you make it a priority? What does it mean to you? Last weekend I was all set to catch up on photographing some new recipes and posting them on here for you, but on Sunday I totally crashed and burned. It turns out that a full time job, a baby, a husband facing a thesis deadline, two transatlantic flights, a training schedule and a social life became too much for me to manage, and my body told me so.

I spent most of the weekend unable to move from the sofa (which I discovered is especially horrible when you have a baby to take care of!), and this experience confirmed what I already know to me true: health is really all about balance. A good diet and exercise regime will only get you so far if you are sleep deprived or not managing your stress well. So, I decided to take the last week to take care of myself a little better, a few bubble baths, yoga in place of HIIT, better food choices, and early nights when I could get them. I’m now back to my usual self, so thanks for letting me take the week off!

It seems fitting that I am sharing this recipe with you today, because for me it embodies those themes of health and balance. Whole grains, fresh seasonal vegetables and a sprinkling of good cheese. This feels like such a restorative meal, and most importantly it can be made in about 20 minutes which is vital if you are feeling pressed for time! I am a huge fan of broccoli, ESPECIALLY when roasted with a little salt. In this dish I have paired the broccoli with juicy sun dried tomatoes, salty feta cheese, and a nutty tahini dressing, all on a base of farro. So beautiful, so nourishing.

Roasted Broccoli with Sun Dried Tomatoes, Farro, Feta and Tahini

Ingredients
  • For Farro/Broccoli mix:
  • 1 cup farro
  • 1 medium head of broccoli cut into florets
  • 1 tbsp olive oil
  • salt and pepper
  • ⅓ cup sun dried tomatoes (drained if oil packed)
  • ¼ cup feta, crumbled
  • For tahini dressing
  • ¼ cup tahini
  • 2 tbsp olive oil
  • 2 tbsp water
  • 1 tsp honey
  • Juice of half a lemon
Method
  1. Preheat oven to 400F/200C
  2. In a large saucepan, bring two cups of water to a boil, add farro and reduce to a simmer for 20 minutes until water is absorbed and the farro grains are tender. Set aside
  3. Meanwhile, roast the brocolli: toss florets with olive oil, and sprinkle with salt and pepper. Roast in the oven for about 20 minutes when the brocolli is tender, a little crisp, and beginning to chat at the edges
  4. While the farro is cooking, and the brocolli is roasting, whisk together the ingredients dog the tahini dressing, set aside
  5. When the brocolli is ready, remove the florets from the oven. Combine brocolli with cooked farro, and stir in the sun dried tomatoes.
  6. Divide into four portions, and sprinkle feta over each plate
  7. Finally, drizzle a little tahini sauce over the top of each portion

Notes

Quinoa, rice, barley or other grains can be used in place of farro if you don’t have it to hand!

Before things get too busy, I wanted to drop by and share this Kale Greek Salad with you!

Dear friends, this salad is so so delicious! Greek salad is my fave, and I eat it weekly through the summer when all the ingredients are in season. The other week, on a whim, I decided to throw some kale into my usual mix of tomatoes, cucumbers, feta, olives and chickpeas. I loved the result, and the boost in nutrition.

If you have been wary of kale salads in the past, I would encourage you to give this greek one a try! The kale is marinated slightly with a lemon dressing, making it lovely and tender. The lemon zing perfectly compliments the salty feta, and the earthy nutty chickpeas. It is just wonderful, let me know what you think!

Ingredients
  • For the dressing:
  • Juice of two lemons
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • ½ tsp dried mint (optional)
  • ½ tsp dried oregano (optional)
  • Generous grind of black pepper
  • For the salad:
  • 1 bunch of kale, destemmed and finely chopped
  • 10 cherry tomatoes (about a cup) halved
  • 20 mixed olives (about ½ cup)
  • half a large cucumber chopped into bite sized chunks (a similar size to the tomatoes)
  • 1 cup (160g) chickpeas
  • ¾ cup (110g) feta, crumbled or cubed
Method
  1. Whisk ingredients of the dressing together until well combined
  2. Combine in a large bowl with the kale, massage the dressing into the kale for a couple of minutes until the kale is fully coated in the dressing
  3. Cover, and put in the fridge to marinate for 30mins to 1 hour, the kale should reduce in volume
  4. Add the remaining ingredients and toss everything until well mixed

Notes

One of my favourite things about this kale salad is that I do not have to massage the kale for very long, marinating the kale in the dressing does the work for me! If you need to speed up the process then by all means massage away! Just add a little sea salt to the dressing to help the process along.

You could absolutely make this salad vegan by omitting the feta, it will still taste fab. Or, make your own vegan feta!
