The first time I roasted cauliflower I was forever ruined, for I can never go back. Like most Brits, I grew up eating my cauliflower boiled, steamed, or even smothered in cheese sauce which is fine and all, but roasted cauliflower is like WOAH.

Honestly I would probably eat a head of roasted cauliflower one its own for dinner and be pretty content, however, I have a responsibility to provide my child with 3 balanced, nutritious meals a day (he gets to choose wether they are eaten or thrown on the floor with a defiant arm swipe), so I decided to toss it with a little whole wheat linguine and a little lemony yoghurt and voila! A simple, delicious meal that can be pulled of in about half an hour. Perfect!

Ingredients
  • 1 head cauliflower, chopped into bite sized florets
  • 2 tsp olive oil
  • ½ lb/ 225 g whole wheat linguine (or pasta of choice)
  • ½ cup plain yoghurt (full fat)
  • ¼ cup parmesan or pecorino, grated (plus more for sprinkling)
  • juice and zest of 1 lemon
  • 1 garlic clove, minced
  • ¼ cup almonds, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • 2 tsp capers (optional)
  • salt and pepper to taste
Method
  1. Preheat oven to 400F/200C
  2. Tip cauliflower florets into a large roasting tray, and toss with olive oil. Roast for about 30 minutes, tossing occasionally, until the cauliflower is tender and beginning to caramelize in places
  3. When the cauliflower is about half way through roasting, bring a large pot of salted water to the boil, cook pasta according to package instructions and drain, reserving about a cook of cooking water
  4. Return the pasta to the hot pan, off the heat. Toss with yoghurt, parmesan, lemon juice and zest, garlic, chopped almonds, parsley, capers (if using), and cauliflower. Add as much of the pasta cooking water to the pot as you need to reach the desired constancy. Season with salt and pepper to taste
  5. Serve with extra parmesan on top!

This Coconut Maple Almond Granola is sweet, simple and delicately flavoured.

Serves: 6-8 servings
Ingredients
  • 2¼ cups oats
  • ¾ cup flaked almonds
  • ½ cup shredded unsweetened coconut
  • 1 tsp cinnamon
  • pinch sea salt
  • ½ cup maple syrup
  • ¼ cup melted coconut oil*
  • 1 tbsp vanilla
Method
  1. Preheat oven to 300F/150C
  2. Line a baking sheet with parchment paper, set aside
  3. Combine oats, almonds, coconut, cinnamon and sea salt in a large bowl, set aside
  4. In a second bowl, combine maple syrup, coconut oil and vanilla. Add the wet ingredients to the dry and stir thoroughly to combine
  5. Spread the granola in an even layer on the baking sheet and place in the oven
  6. Bake for 40 minutes, thoroughly stirring every ten minutes making sure the edges don't burn. Remove from the oven and allow to cool and crisp up before storing and an airtight container

Notes

*You can use olive oil instead of coconut oil, but you will need to reduce the cooking time by about 15 minutes so the granola does not over cook. If you choose to use olive oil I would advise keeping a closer eye on your granola as it cooks, too, it may need to be stirred a little more during cooking.

After a particularly tortuous session in the dentists chair recently, I was feeling pretty sorry for myself. Confined to a tepid liquid-only diet, I need something to lift my spirits and nourish me. Of course, a good old smoothie came to mind (this was after I had thought better of raiding my stash of Dairy Milk <—- not liquid, silly!). Not any old smoothie was going to cut it, I needed something special, something worthy of this pity-party-for-one. After a quick rummage in the fridge and a whiz in the blender, the Blueberry Muffin Smoothie was born.

Let’s talk ingredients-

Oats– A great addition to smoothies if you are looking for more of a meal than a snack. The oats kept me satisfied for ages, and gave me lots of energy.

Blueberries– Delicious, pretty, and a well recognized “superfood”, I love their musky-sweet flavour and vibrant colour. I use fresh when they’re in season, but frozen would definitely work here.

Almond Butter– This made the smoothie lovely and creamy, plus the addition of extra fat and protein made this more more of a meal smoothie.

Banana- Pretty much a necessity in smoothies (erm, except this one?). The banana imparts sweetness, creaminess and always gives me an energy boost. To keep it sweet I use a very ripe one if I can. I have also started keeping them handy in the freezer for smoothies, pancakes, banana bread, muffins…!

Milk- Pick your poison! I do prefer the taste of almond milk in my smoothies, but thats just personal preference, dairy, coconut, soy, ANY milk will work here.

Vanilla– Aha! The ingredient that elevates this smoothie to “Muffin Smoothie”. The vanilla imparts a gorgeous sweetness that makes this feel really indulgent. If you want to skip the vanilla and use vanilla almond milk instead, you could!

Ingredients
  • ½ cup oats
  • 1 cup milk (almond, dairy, whatever you want)
  • 1 ripe banana
  • ¾ cup blueberries
  • 1 tbsp almond butter
  • ¼ tsp vanilla extract
Method
  1. Simply throw all of the ingredients into your blender, and blend until smooth! Add a little extra liquid if you prefer a thinner smoothie.
