We’ve had root canals, cracked fillings, antibiotics, severe allergy to antibiotics (who even knew THAT was a thing?), a blown out tyre on a Houston Freeway, and a partridge in a pear tree. Big shout out to my poor husband who left work to come and replace my tyre on the side of the road in the 100F heat. Is there anything more gallant than a man who rolls his sleeves up for you? I nearly wept with gratitude. Ok, I wept. Girl power? Not so much this week, but at least I have dessert.

In times of crisis one can always turn to the essential trifecta- comfort food, chocolate and wine. This Chocolate Cherry Crisp takes care of the first two, and I see no reason why it can’t be washed down with a generous glass of Malbec. In fact, I heartily encourage it. Sweet cherries bubbling in their own jammy juices, with a crisp toasted almonds and oats on top, and half-melted dark chocolate pieces just sinking down into the cracks.

I haven’t even got to the best part… this crisp is made from 100% wholegrains, and is almost refined sugar free (save for a little in the chocolate chips!). Best of all this comes together in minutes, meaning you can still pull it off if you are having a disastrous week like me…!

Ingredients
  • For the Chocolate Oat Topping:
  • ¾ cup oats
  • ⅓ cup chocolate chips
  • ¼ cup + 1 tbsp sliced almonds
  • ¼ cup + 1 tbsp maple syrup
  • pinch of salt
  • For the Cherry Filling:
  • 3 cups cherries, pitted
  • 2 tbsp wholewheat flour
  • 3 tbsp maple syrup
  • 1 tbsp lemon juice
  • 2 tsp vanilla extract
  • Vanilla icecream, cream, or custard to serve (optional)
Method
  1. Preheat oven to 350F/180C
  2. In a medium bowl, combine the chocolate oat topping ingredients, and set aside.
  3. Place the cherries in a large bowl, sprinkle the flour over the top. Add the maple syrup lemon juice and vanilla, and stir to combine with a wooden spoon
  4. Divide the cherry mixture equally between four ramekins (see notes), layer on the oat topping equally between each ramekin
  5. Bake in the oven for 30 minutes until the topping is crisp and golden, and the cherries are bubbling underneath

This can be made in a casserole dish instead of the ramekins, if you prefer (to be honest, I find that the ramekins help with portion control!!)

These bars contain all of the warm spices of gingerbread with the chewy, nutty texture of a classic granola bar. Absolute perfection!

Gingerbread Granola Bars

Ingredients
  • 1 cup pitted dates
  • 1½ cups rolled oats
  • ½ cup whole raw almonds
  • ¼ chopped walnuts
  • ¼ cup pumpkin seeds
  • ¼ cup honey (or agave/maple syrup if vegan)
  • ¼ cup peanut butter )or almond butter)
  • 1 tsp ginger
  • ½ tsp cinnamon
  • pinch nutmeg
  • 1 tsp vanilla
  • 1 tbsp molasses
Method
  1. Line a 9x9 inch baking tray with cling film (plastic wrap), set aside
  2. Put the dates into a food processor, and process until the dates form a sticky dough-like ball
  3. In a large bowl, combine the date "dough" with the oats, almonds, walnuts and pumpkin seeds. Set aside
  4. In a small saucepan, melt together honey, peanut butter, ginger, cinnamon, nutmeg, vanilla and molasses over a low heat, stirring constantly
  5. When the honey-peanut butter mix is warm and well mixed, pour the mixture over the date-oat mix
  6. Stir thoroughly until fully combined, press into the 9x9 inch baking tray, and chill in the fridge for at least 20 minutes
  7. Cut into 8 rectangles

This recipe is very adaptable- you can play with the nut and seed combinations and even replace some nuts with a little dried fruit!

Ah, the Strawberry and Coconut Jarfait! What is a Jarfait you ask? Why, it is a parfait in a jar of course! Everyone knows that food is instantly cooler if served in a mason jar (*wry smile*), haven’t you been on Pinterest lately?

In all seriousness, packing my breakfast in a mason jar has a lot of advantages. I can make it the night before and just grab it to go in the morning which is handy when you start your work day at 7am. I also prefer to store food in glass containers instead of plastic, and admittedly, it does look a lot prettier in a mason jar than it would in a battered old tupperware container.

That being said, I encourage you to make this Strawberry and Coconut Jarfait, and serve it in whichever vessel you see fit, whether your reasons are aesthetic, practical or otherwise. The combination of creamy, tart greek yoghurt, toasted, nutty granola and sweet strawberry compote is such a treat, and choc full of good-for-you stuff too! The strawberry chia jam is adapted from my quinoa porridge recipe, one of the first recipes I ever posted on E.L.K! I make it all the time in big batches and use it for porridge, mixing in yoghurt, spreading on toast. Try it, seriously, and begin with this jarfait!

Ingredients
  • For the strawberry chia compote:
  • 2 cups frozen strawberries (1 10oz/280g package)
  • ¼ cup honey (or agave or maple syrup)
  • ¼ cup chia seeds
  • 1 tsp vanilla
  • For the oat mix:
  • ¾ cup of oats
  • ⅓ cup flaked almonds
  • ⅓ cup unsweetened coconut flakes
  • To assemble:
  • 2 cups plain greek yoghurt
  • Additional nuts, seeds or coconut to top (optional)
Method
  1. Start by making your strawberry chia compote so it has time to cool: Combine strawberries, honey, and vanilla in a saucepan, gently bring to a boil, add the chia seeds and reduce to simmer for 20 minutes, remove from the heat and allow to cool and thicken while you prepare the oat mix
  2. Preheat the oven to 375F/190C
  3. Combine oats, almonds and coconut flakes in a bowl, transfer to a glass baking sheet and toast in the oven for 10 minutes until everything takes on a golden hue, remove from the oven and allow to cool.
  4. When the oat mix and strawberry compote have cooled, you can assemble your parfait: start with a quarter of the yoghurt, followed by a quarter of the oat mix, and then a quarter of the compote. Repeat!

Notes:

You can make the strawberry chia jam a few days before- the longer you leave it, the thicker it becomes.

The jam is also very adaptable- try it with a different berry!
