Lemon Chia Energy Bites- Emma's Little Kitchen

If you have been reading this blog for a while, or you follow me on instagram, you probably know that running is a passion, or maybe even a compulsion of mine. If you know me in real life, you definitely know it. Many of you also know that I spent most of January and February of this year limping around with a nasty injury that preventing me from running at all. This was totally miserable for me (and TOTALLY miserable for my long suffering hubby), but I can happily report that I am back on track (ha, punny!), and getting my mileage back to about 30 miles a week. Two immediate consequences of my recovery were:

  1. A cheerier demeanor
  2. A ferocious appetite

Enter lemon chia energy bites. They cheerily compliment my mood, but more importantly, provide a delicious and convenient boost of energy post or pre run. Wether running is your thing or not, they make a really tasty snack, and last a good week in the fridge.

Lemon Chia Energy Bites

Ingredients
  • 2 cups pitted dates, chopped
  • ½ cup oats
  • ½ cup flaked coconut
  • juice and zest of 1 small lemon
  • ½ tsp almond extract (optional, but delicious!)
  • 2 tbsp chia seeds
Method
  1. Put all ingredients into a food processor, and process until the ingredients are well combined and a large dough-like ball forms
  2. Remove from the processor, and roll into small balls

Enough about me though, lets talk about MY MUM. She runs Marathons and is currently training for her first ultra. She’s a nurse. Like me, she likes her tea black. Unlike me she despises chocolate. One of her favourite foods, is cake, and one of her favourite flavour combinations is lemon and ginger. Thus- today I present Lemon Ginger Cake, for my Mum.

This cake is made with whole wheat flour, unrefined sugars, yoghurt and olive oil. It’s a treat, but a slightly healthier one. It’s sticky and beautifully moist, keeps well for days, and is just bursting with zingy citrus and warm gingery flavour. Truly, its a winner.

Ingredients
  • For the cake:
  • 1½ cups whole wheat pastry flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 tsp ginger
  • 1 cup coconut sugar
  • zest of two lemons
  • 3 eggs
  • 1 cup plain whole milk yoghurt
  • ½ cup olive oil
  • 1 tsp vanilla extract
  • For the glaze:
  • 3 tbsp honey
  • juice of 1 lemon
Method
  1. Preheat oven to 350F
  2. Line a loaf tin with parchment paper, or grease well
  3. In a medium bowl, whisk together flour, baking powder, salt and ginger. Set aside
  4. In a large bowl, use your fingertips to rub the lemon zest into the sugar until fragrant and well combined
  5. Whisk the eggs, yoghurt, olive oil, and vanilla into the sugar mixture, and then whisk the flour mixture into the wet ingredients
  6. Tip the mixture into the loaf tin, and bake for 55-60 minutes until a toothpick comes out clean
  7. When the cake is done, remove from the oven and cool on a wire rack. When the cake is still warm, poke a few holes into the top of the cake with a fork or toothpick. Add the honey and lemon juice to a mug, microwave for 45 seconds, and give it a quick whisk, then drizzle the glaze over the top

If you grew up in the UK, you may also have found a Terry’s Chocolate Orange occupying your stocking on Christmas morning (Its not Terry’s, its mine!). And after I had bashed it on the corner of my bed for long enough to break it into segments, I would wolf it down for a pre-breakfast snack. Hey, Santa only comes once a year!

For this reason, any kind of chocolate orange treat just tastes like Christmas to me, including this uber-delicious chocolate orange granola bark. Warning, the rich dark chocolate, toasty granola crunch and warm citrus vibes make this bark highly addictive. Honestly, once I nibble on a little bit I CAN.NOT.STOP! So please proceed with caution friends.

It comes together incredibly quickly (just allow enough time for it to cool and set!), and people will admire your Martha Stewart-esq brilliance all December long. Just make sure you make enough for yourself too!

Chocolate Orange Granola Bark- Emma's Little Kitchen

Chocolate Orange Granola Bark

Ingredients
  • 2 cups (about 350g) dark chocolate chips
  • zest of 1 orange
  • ½ tsp cinnamon
  • 1 cup granola* (about 150g)
  • ¼ cup dried apricots (optional)
Method
  1. Line a baking sheet with a large piece of wax paper or parchment paper
  2. Put the chocolate chips, orange zest and cinnamon into a large bowl Fill a saucepan with a couple of inches of water, and set the bowl snugly into the saucepan. Make sure that the water is not touching the bottom of the bowl, and will NOT touch the bottom of the bowl when simmering (this is VERY important you don't want to scorch the chocolate- it will turn into a grainy nightmare...!)
  3. When the chocolate is completely melted, remove it from the heat and quickly fold in the granola and apricots. Turn the mixture out onto the lined baking sheet in a thin layer using a spatula. You will need to work quickly so the chocolate doesn't set
  4. Place the tray in the fridge, and allow to set for at least an hour before breaking it into chunks and devouring 🙂

Notes

*Use a relatively plain granola (this is a good option). If your granola contains fruit you may want to skip or reduce the dried apricots.

Dried apricots can be substituted for dried cranberries or dried cherries.
