Vegetable & Barley Irish Stew

- 1 tbsp olive oil
- 1 onion, sliced
- 2 leeks, split in half lengthways and sliced
- 2 celery stalks, sliced
- 1 large potato, cut into 1 inch chunks
- 2 large carrots, cut into 1 inch chunks
- 1 small turnip, diced
- 1 cup (250ml) stout
- 1 cup (250ml) vegetable stock
- 2 cups (500ml) water
- ½ cup (100g) pearled barley
- 1 bay leaf
- 1 tsp dijon
- ½ tsp smoked paprika
- 1 tbsp sugar
- 1 tbsp tomato paste
- salt & pepper to taste
- Warm olive oil over medium heat in a large pan
- Add onions and sauté for a couple of minutes until golden
- Add leek and celery to the pan and cook for a couple more minutes until the vegetables start to catch at the bottom of the pan
- Deglaze the vegetables with the stout, then add the stock, water, and remaining ingredients to the pan
- Simmer with the lid on for 30 minutes, stirring occasionally, until the barley is tender and chewy and the stew has thickened
