Lemon Chia Energy Bites
- 2 cups pitted dates, chopped
- ½ cup oats
- ½ cup flaked coconut
- juice and zest of 1 small lemon
- ½ tsp almond extract (optional, but delicious!)
- 2 tbsp chia seeds
- Put all ingredients into a food processor, and process until the ingredients are well combined and a large dough-like ball forms
- Remove from the processor, and roll into small balls
